"We still use this original recipe, which is sized for about 60 halupki - enough to feed 15 to 20. I've found they can be frozen about 2 months and still taste good, up to 4 months and still taste decent.


WARNING! Do not attempt this recipe with a cold or stuffed nose. Adding the dry ingredients to the meat is based on smell, not measured amounts - grandpa butchered animals on the farm and was a cook in the Hungarian Army in WW I, and he figured you can't count on the animals to give the same quality meat every time! Also, wash hands well and mix the meat with bare hands! ! ! Rubber or plastic gloves leave a taste behind, and even wooden mixing spoons just don't do the job.


Cabbage - 2 heads for this recipe
3 lb. Ground chuck
3/4 lb. Ground pork
Salt & pepper
2 eggs
Garlic powder
Paprika
1/2 of a 2" onion, sauteed in 1/4 lb. butter
just under 1 cup rice and equal amount water
1 large can (28 oz.) Silver Floss sauerkraut
1 large can (28 oz.) Hunts Tomato Sauce
1 large can (28 oz.) Hunts Crushed Tomato
Prepare the cabbage - puncture the core with a knife, and boil about 45 minutes (if using two heads, boil separately). After cooling, prepare the leaves - pull them off the head in as large a piece as you can. You'll probably have to take thin slices off the spines and thicker veins.

Mix the meat together and smell it. Remember the smell of the meat. Sprinkle on a little salt and pepper, and knead the mixture by hand. Smell again. Keep adding salt and pepper until it just barely masks the smell of the meat.

Cook the rice until all the water is absorbed. Set aside.

Mix the eggs into the meat mixture. Smell the mixture - remember the smell. Sprinkle in a little garlic powder and paprika; knead well. Keep mixing in small amounts of garlic powder and paprika until you can detect a garlic smell. Add the juice from the sauerkraut, the rice, sauteed onions, and 1/3 cup of the tomato sauce. Mix thoroughly.

Put a small amount of oil in the bottom of a BIG pot. Roll a small handful of the meat mixture into a firm oval; wrap with a cabbage leaf. Tuck the edges into the roll. Line the bottom of the pot with the halupki; cover with a little bit of the sauerkraut, some tomato sauce, and a layer of leaves.

Keep building layers, using the "bad" and small cabbage leaves for the layering. Top with the crushed tomatoes, remaining sauerkraut, and the very top is cabbage leaves. Add enough water to totally cover.

Stick a wooden spoon down to the bottom (CAREFULLY, along the side of the pot) to break any air bubbles between the layers - do NOT puncture any of the halupki! - and add more water, if necessary. Repeat this several times, because air between the layers will make a terrific mess when the pot begins to boil!

Bring to a boil, then turn the heat down; simmer for at least four hours, then keep warm until served. We always prepare the halupki the night before - simmer two hours, turn off the heat overnight (do NOT refrigerate ! ! Just leave the pot on the stove), and simmer another two hours the next morning.

Serve with mashed potatoes and milk - although a dry white wine also works well. A lot of work, but well worth it! "

Do you know you are the ONLY person EVER who calls it "halupki", well that is except my family?!?!?!?! I am glad that we are not the only ones, although we don't use tomatoes or tomato products....
And I do concur, nobody makes it like Grandma, aka Ya-Ya.

I do this. I have a list, of foolproof meals. I have about 20 listed, but DH just recently cut out dairy and eggs, so I am down to about 7.. I need to increase my list.

here are some on my list:

spaghetti
chili
rice and beans
enchiladas
wraps
pizza
baked potato bar

:offtopic: I hope I don't get in trouble for going OT but I just can't resist;) I just love the picture of those boys playing in the ocean...it makes me smile everytime I see one of your posts. I just had to share that::yes::

I make chicken tacos/burritos in the crock pot.

Toss chicken (boneless or bone in) with a jar of your fave salsa, a can of rinsed black beans and a can or some frozen corn. Shred the chicken when it's done & serve with tortillas/taco shells & the toppings of your choice.


I also do bbq pulled chicken or pork in the crock pot.

Throw your pork or chicken in with a bottle of your fave bbq sauce. Shred the meat when done, serve on rolls for sandwiches or serve with rice or potatoes or corn bread.

I'm kind of a crock pot dummy:confused3 how pathetic is that I know but how long and on what temp do you do these for in the crock pot???

Sorry about that. I do it on low for 6-8 hrs (the boneless takes less, bone in takes longer) and 4-6 hrs on high.
 
This is really easy, cheap, and yummy.

2 lb pork, cubed
2 cups Coke (do not use diet)
6 cloves garlic, minced
2 tbsp ginger, minced
1 bunch scallions, minced
3 tbsp soy sauce

Brown the pork in some oil, remove from heat and add Coke. Bring to a boil, then simmer 30 min, add remaining ingrediants, and simmer for an hour. Serve with rice.

I've had to use a little cornstarch before since the sauce never seems to get thick enough, but it is very easy to make.


This can be done in the crock pot, I do it a lot with pork loin or tenderloin.

1 pork loin or pork tenderloin.
1-2 cans of coke (or any other dark soda in the fridge)
some sweet baby rays or other bbq sauce.
cook all day in crock pot
shred pork with forks & serve on buns.
Yumm... and fabulous to serve to a crowd for cheap too!

Aww, thanks! It's one of my favorites of them. I must admit, I took about 50 shots of them playing.. just to get this one shot. :)
 
You could also make a list divided by categories. For instance we could eat spaghetti every night. I have categories for pasta, ground beef, chicken and "other" with several tried and true meals under each. Then I can just pick something form each category according to what is on sale and not be too repetitive or have a whole week of ground beef etc. That way you can have more to choose from than just 14 meals but still have a type of rotation thats easy to do.
 
Here's a Sloppy Joe Recipe that is more "meaty" rather than more "tomatoey" (is that a word?)


Sloppy Joes

1 pound hamburger
1 Tablespoon Worcestershire sauce
1 teaspoon mustard
1 small onion, chopped
1 Tablespoon ketchup
Salt to taste
1 can Chicken Gumbo soup

Fry hamburger and onion; drain. Return to pan and add remaining ingredients. Simmer for about an hour.

Well it was worth taking all those shots because it's a great one!!! I live in Maine and am at the beach as often as we can and I love seeing moments like that...it just reminds us that sometimes you just have to run right in!!!! Although I must say I would be the little guy tip toeing in...I wish I was more like the other too ;) They are the way my DD's are!!! Anyway, thanks for sharing ::yes::
 
I posted this on another thread just now. I don't think I saw it on here. Sorry if it's a repeat.

Roast in the crockpot, using Lipton Onion soup and a little water. I add potatoes and green beans and let it cook all day on low (if it's a large roast I put it on high a few hours and cut it back to low for the rest of the day). Delicious!

Hot wings in the crockpot. I put the chicken wings in the crockpot and cover them with Louisiana Supreme Chicken Wing Sauce (that stuff rocks!). Let it cook on low all day. I like my wings a little crispy so just before dinner time I'll put the wings on a cookie sheet, dump more sauce over them and cook them for 5 min. or so. We have wing nights sometimes with a salad, corn on the cob, or fruit and veggie plates. Fun finger food dinner. :)
 
Italian Chicken- SUPER EASY!!

Throw the frozen Chicken breasts into the crock pot, usually 2-3, and put in Fat Free Italian dressing, as much as you would like, Parmesan Cheese, and Italian Seasoning. I throw potatoes and carrots in - 6 hours sitting all day, YUMMY!!!!!!!

This is the recipe I got with my crockpot. It is so good, I only make it once or so a year....it almost never makes it out of the pot, we stand around the pot and eat it while it's cooking! It is SO good. And you can cut back on the calories by using evap. skim milk and low fat cheese.

Macaroni and Cheese for Crock-Pot® Slow Cooker

Ingredients:
3 cups cooked macaroni
1 tbs. butter or margarine, melted
2 cups evaporated milk
3 cups shredded cheddar cheese
1/4 cup onion, chopped
1 tsp. salt
1/4 tsp. pepper


Directions:
Add ingredients to stoneware of Crock-Pot® Slow Cooker. Cook on High for 2 to 3 hours, stirring twice.
 
I am NOT a lover of cooking, so I am all about easy. I cook most all of our meals at home because it is so much better for us and easier on our checking account!

Home made spaghetti with lots of veggies!
Bacon wrapped BBQ chicken (SO darn good and easy)
I do make lots of steak and pork chops with various seasonings.
Fish and Chips
Pulled pork (in a crock pot)
Pot roast (crock pot)
Ribs, kraut and potatoes (crock pot)
Grilled hamburgers. I like a lot of Rachael Ray's receipes for this. She adds all kidns of goodies to her burgers. And they all taste so good.

With every meal we have salad or cooked veggies of some sort. And then a starch of some kind too. I make German potato salad alot too. We like it much better than American and it is healthier without all of the mayo. Plu sis it great with Brats for dinner and sandwiches the next day!

1. Rice A Roni (make as directed, when half of water has been absorbed, add chicken strips on top of rice and they will be perfectly steamed when the rice is done. I stir in thawed (from frozen) peas at the end for a true one pot meal!

2. Cornflake chicken casserole

2 C. cooked chicken, diced
1 (10 1/2 oz.) can cream of mushroom soup
3/4 C. mayonnaise
1 C. celery, diced
2 C. cooked rice, cooked in chcken broth
1 T. lemon juice
1 T. onion, grated
1 (3 1/2 oz.) can sliced mushrooms, drained
1/2 c. sliced almonds, toasted
Mix above ingredients in a greased 2-quart casserole, sprinkle with 1 c. cornflakes, and spray with butter spray, or drizzle with 3T melted butter.

3. Pre-made tortillas, grated cheese, leftover or canned meat (sloppy joe, pork, meatloaf, chicken, etc.), salsa. Heat tortillas with cheese, before removing from grill add meat or other toppings desired. Serve with rice and beans, and some crispy baked, low-salt plantain chips!

4. At 8 a.m., place ribs (bone in or boneless) in crock pot in a.m. on low, cover with barbecue sauce. At dinnertime, remove from sauce, use sauce to flavor noodles or rice dish served with salad.

5. Bake chicken or turkey in oven with poultry season on top and baste with juices until cooked through. Eat for one meal and save leftovers. A few days later, Prebake bottom pie crust (I make my own, but store bought Pet Ritz isn't bad, or buy the premade that rolls out)...add leftover chicken or turkey to a bag of frozen mixed veggies, include can of low salt chicken gravy and heat to boil on stovetop. Pour mixture into bottom crust, add unbaked top crust, and put into oven until top crust is baked.

6. Chicken Parmesan
1/2 tsp garlic powder
1/2 cup canned tomato sauce divided
1/2 oz part-skim mozzarella cheese shredded
1 cup cooked whole wheat pasta
1 cup mixed greens
1/2 cup peeled sliced cucumber
1 cup sweet red pepper(s)
2 Tbsp fat-free Italian salad dressing
4 oz uncooked boneless, skinless chicken breast

Instructions: Preheat broiler. Sprinkle chicken with garlic powder and season to taste. Broil until cooked through, turning once. Top with 2 tablespoons sauce and cheese. Broil until cheese melts. Toss salad ingredients with dressing. Serve chicken with spaghetti, topped with remaining tomato sauce and salad on the side.

Do you put the carrots and potatos in toward the end or leave them all day?

I found this recipe on the web somewhere. It is really easy and everyone loves it.

Easy Crockpot Stroganoff
1lb. beef stew meat
1 can cream of celery soup
1 can cream of mushroom soup
1 envelope dry onion soup mix
1 small container sour cream

Put first four ingredients in crock pot and cook on low 6-8 hours. Just before serving add sour cream. Serve over noodles or rice. Enjoy!

We are a family of four. I usually serve with a salad and always have leftovers.
