Favorite meatless meals

I love a good eggplant parm but it it has a similar consistency to chicken parm, something is wrong.
Haha. You may have me there. I haven’t eaten meat in over 25 years so take my opinion with a grain of salt.
I guess I meant that they are prepared the same way with sauce and cheese and it would be a good substitute.
 
Summertime's a great time for some country cooking--white (or pinto) beans, cornbread, sliced garden tomatoes, corn on the cob, half-runner green beans, cucumber salad, okra (fried or stewed okra and tomatoes), roasted beet salad, peach (or whatever berry's in season) cobbler, etc. You could throw some or all of this on a table and there's going to be some good eatin'.

The way my Mamaw used to cook them was she'd string them, snap them in 2-3 pieces (depending on the length of the bean), put them in a pot with some sliced onion and a little bacon or bacon grease. Then add enough water to cover and cook them a long, long time. She'd add new potatoes at the end (long enough to cook them through). Good stuff.

Vegetarian - I cook 1.5 times a night - their meal (that I eat most of the sides of) plus my protein.

My favorite is refried black bean tacos with tons of veggies - tomatoes, jalapenos, radish, lettuce, onion, etc.

I do a lot of green curry - easy enough to make my veggies on the side of theirs. Add some rice and voila.

I do not do any artificial meat substitutes other than trader joe's breakfast patties, which I love. Otherwise, I have yet to find one that I like. So, my substitutes in meals are tofu, lentils, and lots of veggies.

I like to make a sheetpan of roast veggies then serve with over medium eggs over the top. Delicious!

Soups, stews, chili are good ones - I use squash, sweet potatoes, and lots of beans.

I made a huge batch of collard greens a few weeks ago and each morning I threw some in a skillet then topped with a cracked egg and cooked till medium. It was wonderful - would be a great anytime of day meal.

My mom used to make green beans and potatoes the exact way your Mamaw did. Brings back great memories.
 
Sometimes the prep work can be a little time consuming but the vegetarians and meat eaters in my family all like baked falafel and it's relatively cheap to make. For a quicker meal I like the Birds Eye steam fresh lentil pastas but a little warning, they do not smell good.
 
Beet and feta grilled cheese, zucchini and black bean tacos, veggie risotto (great in the instant pot), mushroom lettuce cups, black bean enchiladas, and zucchini quesadillas. Most meats can be replaced with mushrooms, beans, quinoa, zucchini, etc. and the beyond beef meats/impossible burger replacements are actually pretty good but like another poster said make sure you keep an eye on the calorie count. Also, I top most things with an egg for added protein.

A lot of the stuff in my vegetarian rotation came from Blue Apron recipes, which you can take a look at without subscribing.
 
I like to do frittata variations (spinach and feta, mushrooms and Swiss, zucchini and provolone—basically whatever veggies and cheese you have that go together—I do meat sometimes too) and add a side of fruit and bread/toast/muffins etc.
 
Last night I made a stuffed sweet potato.... bake some sweet potatoes. Meanwhile in a pan saute diced onion, black beans, corn, with paprika, cumin, chili powder. In a bowl mix either greek yogurt or sour cream with taco seasoning. Cut open the sweet potato and top with the bean mixture, seasoned yogurt/sour cream, shredded cheese and salsa, and top with some green onion.
