What’s for Dinner Tonight?

Another more Happy Hour tonight. Weird because I’m usually a homebody, especially during the work week. A bottle of super Tuscan for me and my two girlfriends with assorted appetizers for dinner (baked mozzarella, meatballs, garlic bread, etc.)
 
Grabbed a bag of kale, chicken, and white bean soup out of the freezer.

Having it with the last of the bread with butter mostly so I can justify buying a new loaf.
Must say the dark rye bread I’ve been buying lately holds up well in the fridge.
 
We had Oysters Rockefeller, soup ( either Lobster Bisque or NE Clam Chowder) and green salad.

I took the last red potato from the bag and made a corn chowder today. Added a drained and rinsed can of calaloo ( a Caribbean green sort of like escarole) to the soup just to heat thru since it was already cooked. The freezer is slowly but surely getting deeper which in this case is a good thing.
 
It’s a blustery cold day and I’m still in “deplete the freezer goods” mode.
Think the manicotti is calling my name. There’s a bit of corn chowder left so I’ll put a little piece of cut up ham in it and it should make a nice meal starter.

There’s strawberry gelato left so I’m going to add some vanilla ice cream and make an ice cream soda with for dessert. It can never be too cold for ice cream 😊
 
Last night was dinner out with friends... German restaurant a few miles away. I literally cried eating it, as it was so reminiscent of being in my grandma's house. The decor, the smells, the sounds, and definitely the taste. It was beyond what I needed.

I had walleye with red cabbage, spaetzel, bread dumplings, Cole slaw. Insanely good.
