Carrot muffin and banana bread recipes please!!

I am looking for a very simple carrot muffin and banana bread recipes- can anyone help me??

This is my mother's banana bread recipe. I love it!

1/2 c oil, butter or margarine
1 c sugar
2 eggs unbeaten
3 very ripe bananas
2 c flour
1 teaspoon baking soda
1/2 c chopped nuts

Cream sugar and butter. Beat in eggs one at a time. Add bananas and mash until pulpy. Beat in flour and baking soda. Add nuts last. Bake in a greased loaf pan (or wax lined) 350 for 1 hour/1hour 15 minutes.

Optional: You can add chocolate chips too!
 
Here's a pretty simple carrot muffin recipe I have:


Carrot Muffins

1 1/2 c White sugar
1 1/4 c Corn oil
3 Eggs
3 c Flour
2 ts Baking powder
1 1/2 ts Baking soda
1/4 ts Salt
2 ts Cinnamon
2 c Grated carrots


Preheat oven to 345 degrees F. Cream sugar and oil, add eggs one at a time, beat well after each. Add dry ingredients and mix well. Stir in carrots, pour into prepared pans and bake 20 -25 minutes or until center springs back when touched.


You can add raisins if you like them.
 
Of course, a Disney recipe:

Banana Bread
Monorail - Disneyland Hotel

1 cup butter
2 cups sugar
2 eggs
2 tsp. water
2 cups bananas, mashed
1/4 tsp. vanilla extract
3 cups flour
1/2 tsp. salt
2 tsp. baking soda
1 cup walnuts, chopped

Preheat oven to 350:. Sift together flour,salt and baking soda. Set aside. Melt butter on the stove or in microwave. Mix butter and sugar until well blended. Add eggs one at a time mixing well after each addition. Add bananas and vanilla. Fold in flour mixture and walnuts and blend until all flour is moist. Grease 2 loaf pans and divide batter equally between the 2 pans. Bake for 1 hour or until center of loaf is firm and toothpick inserted in center comes out clean.
 


Here's a really easy banana bread recipe:

BANANA NUT BREAD with Yellow Cake Mix

1 box yellow cake mix
3 eggs
1/3 cup oil --or-- applesauce
3-5 mashed bananas
1 cup chopped nuts

Mash bananas, mix with rest of ingredients. Pour into two greased
and floured loaf pans and bake at 350 for 30 - 35 minutes. -- OR -- pour
batter into a Bundt pan and bake for 45 minutes.
