Sun- hummus and grilled veg and haloumi wraps
Mon- impossible cheeseburger pie. I didn't even know this was a thing. Your American food is awesome!!
Tues- beetroot burger patties, sweet potato cubes and broccoli
Wed- slowcooker mac and cheese with green beans and grilled tomatoes
Thurs- leftovers or beans and toast. We'll be home late.
Fri- cilantro, yoghurt and lime grilled chicken and salad
Sat- I'll be out, they can have grilled cheese or leftovers
 
Sun - Mesquite BBQ Pork Loin, Mashed Potatoes, Roasted Broccoli, Grapes
Mon - Spinach and Cheese Ravioli in a Pesto Sauce, Caesar Salad, Sliced Kiwi
Tues - T-Bone Steaks (got these for $4.50/lb yesterday), Carmelized Onions and Roasted Mushroom Topping, Baked Potatoes, Roasted Green Beans
Wed - Tacos (not sure what type yet - chicken or beef - whatever choice will be next 2 meals), Chips and Salsa, Sliced Mango
Thurs - Black Bean and TBD Meat Chili, Corny Cornbread, Kiwi/Grapes/Mango/Banana Fruit Salad
Fri - 3-way Chili Spaghetti - Chili, Onion, Cheese (jarred sauce for kids), Fruit Smoothies
Sat - Grocery Pick Up Meal or Leftovers or OUT

Skipped the steaks this week and made meatloaf vs chili and pizza on Friday, but other than that, pretty much stuck to this...it's clean out the freezer week here, so here goes...

Sun - Phillip's Crabcakes, Quinoa with Rosemary and Olive Oil, Caesar Salad, Raspberries
Mon - Honey Mustard Chicken Breast, Roasted Squash, Strawberries, Red Lobster Biscuits
Tues - Homemade Chicken Alfredo, Roasted Green Beans, Blueberries
Wed - Black Bean Chili, Corny Cornbread, Fruit Smoothies
Thurs - Chili Cheese Nachos, Sliced Apples
Fri - Out or Leftovers
Sat - Labor Day Pool Potluck - I'll bring a fruit tray
 
Sun - Split pea soup made with homemade chicken broth
Mon - Pasta bar, with sauce, parm, sliced almonds, crushed red pepper, parsley
Tue - Ratatouille (the food, not the movie)
Wed - Red Beans and Rice in pressure cooker
Thu - Dr. Pepper pulled pork
Fri - Bacon and avocado salad
Sat - Smoked turkey on Big Green Egg, barbecue beans from pressure cooker, cole slow, corn, couscous
 
Saturday: Rotisserie chicken, mashed potatoes, and green beans

Sunday: Shredded chicken tacos with Mexican rice

Wednesday- eggs, sausage, Irish potatoes
Thursday- chicken fried rice
Friday - out for dinner
 
Tonight we had chicken stir fry with zucchini and carrots over rice
Tomorrow I work late so leftovers
Tuesday will be grilled cheese and tomato soup
Wednesday will be tacos
Thursday will be pork chops with sweet potatoes and corn
Friday will be French dip sandwiches with fruit and chips
Saturday will be leftovers again as I work late
 


Monday - loaded cauliflower soup, collard greens
Tuesday - roasted cauliflower (we have a bunch) and kale, pot roast
Wednesday - taco "rice", cauliflower, leftover pot roast, taco seasoning.
Thursday - herb pork roast, peas, brussel sprouts
Friday - kielbasa and cabbage
Saturday - chicken meatball omelette
Sunday - clean out the fridge for vacation!
 
Yesterday we had Mexican Tortilla Soup for lunch - I don't use a recipe - just cooked onion, chicken broth, chicken, frozen corn, can of black beans, can of tomatoes with chilies, chili powder, garlic powder, cumin, juice of half lime... all to taste. We top it with sour cream or cheese or tortilla chips... or all three.

We had garden fresh tomatoes, so I made BLTs and chopped salad for dinner - to make my chopped salad, I use cabbage, romaine and kale, all chopped fine. My kids say they hate kale, but they love chopped salad.

I went through my freezer and pantry and made this list of things I'd like to make in the next couple of weeks: (click on the links for recipes)
Carbonara - I add frozen peas to mine
Fish Cakes with Cilantro-Lime Slaw
Chili Verde and some Mexican-type sides (Spanish Rice, Corn, Refried Beans, tortilla shells) - trying to figure out how to make it like my favorite Mexican restaurant
Meatloaf, Mashed Potatoes, Broccoli
Yellow Curry - I skip the potatoes and add broccoli instead - served over rice
Ragu - use up some garden veggies
Mexican Hotdish - I layer some taco seasoned hamburger with Spanish rice, black beans, corn and top it with jalapeno cheese cornbread, then bake it up. Serve with shredded lettuce, cheese, sour cream.
Spicy Pork Loin with Cole Slaw - I use a loin instead of shoulder... a little leaner, but still tasty
Grilled Cheeseburgers, Broccoli Salad, Pasta Salad
Pollo Guisado Chicken Stew - going to try this new recipe I came across - need to get some fresh sweet corn from a street vendor
Cheesy Chicken/Wild Rice Casserole

Fri- marinated chicken (yoghurt, cumin, coriander, salt, pepper and lime) and peas and carrots

Wednesday: I have my workout class. Leftovers
Thursday: Scrambled eggs, bacon, (frozen) blueberry waffles
Friday: Cheddar bacon chicken fingers, salad
Saturday: Leftovers
Sunday: Either baked ziti from the freezer or frozen pizza with carrots and ranch
 
Fri-chicken burgers, potato salad, caprese salad
Sat-fasting
Sun-chicken fajitas
Mon-shrimp tacos with cilantro lime dressing
Tues-rotisserie chicken
Wed-flatbread
Thurs-soup and grilled cheese

**We have tons of fresh fruit and veggies in the house to go with all the above meals.

Thurs - Shrimp scampi.
 
Last week went well, hopefully this week will be the same.

We have evacuated up north due to Irma :(:( headed up north to my inlaws FL home (about as far north as we could safely get to!)

Wish I was closer so I could bring you some good eats! Stay safe and I will be keeping you in my thoughts. I'm trying to stay up to date on things since I have friends in Tampa that I met while training for my job so am super concerned for them.

I'm working on my meal plan now so hopefully will be able to post later today.

I'm really sorry:sad1:. My sister and her boyfriend live on Tampa Bay. They got out last night and went to friends further north last night, and on to NOLA today. I'm so thankful she's safe, but I am so sad for her that she has to sit and wait to see if she's going to lose her home. So much uncertainty. Sending love and good thoughts to all of you who are displaced or in the path of this storm. :hug:

We just returned from Disney last Monday (spent Sunday at Clearwater Beach.. so surreal). It's back to eating at home which doesn't sound so bad right now after eating in restaurants for 10 days. Get back to me in a month when I'm sick to death of cooking again.:rolleyes1

Saturday - just ds and I, eggs and toast and fruit.
Sunday - Dinner at my parents
Monday- Wonton Soup and fried rice
Tuesday- BBQ pork chops , corn and cauliflower
Wednesday- Lentil Soup and homemade bread
Thursday - Pork Schnitzel, roasted potatoes, and garden salad
Friday - Homemade pizzas
