Eat at Home 3!

Totally over budget on groceries this month. I include toiletries etc. in my grocery budget, so with kids going off to camp (sunscreen, shampoo etc) and some beginning of summer BBQs things have gotten out of hand. This week has been all about using up what we have, including some beginning of summer veggies from our CSA (lots of lettuce, not a whole lot of other things yet). I will be cooking for 2 for most of July and August (and most of our veggies will come from the CSA), so I should be able to really reduce our grocery spend for the next couple of months.

S- Mac and Cheese (last night home dinner request from DD)
M- Buffalo chicken salad (used canned chicken I had on hand - not as good as grilled, but not terrible)
Tu- Work dinner out, DH will eat PB&J or scrambled eggs, most likely
W- Steak salads (flank steak from the freezer, beets from CSA, plus a little leftover bleu cheese and maybe some nuts of some sort)
Th- Swiss Chard, pepperoni and tofu in tomato sauce over pasta
F- Leftovers
Sa- Pizza - flavor TBD
 
OP Here :) I thought working from home would force me to plan better but in the short term it has caused me to throw all planning out and rely on take out way to much from being tired and stressed not good. Time to put on my big girl undies and buckle down! We have 77 days till Disney and have been blessed to upgrade to boardwalk with a ap discount, so excited! Also surprise! Pregnant with number 4! My youngest is 6 and oldest will be 16 soon so bit of a shock here but in a good way just means planning and more planning is necessary ti stay on budget and avoid any new debt. Glad I can share our news here as its early and I don't head to the drs till end of July so waiting to tell family and kids bought a cute shirt through with Disney snacks saying eating for two thats how we will tell them anyways thanks for listening

Wednesday garlic ginger pork loin potatoes and squash
Thursday will be pancakes sausage and strawberrys
Friday bbq pulled chicken with salad
Saturday American chop souy
Sunday is grams birthday she has requested bingo so off to the casino we go kids sleeping at grandmas and out to dinner for us

Congrats on the pregnancy!:) And don't forget to take into account that you have those older children, who can chip and help you make meals (and clean up after them - almost always the suckier tasks).
 
Menu Plan - week of June 30th
Going to beach this week so some things up in the air as I like to get fresh seafood from the fish markets-rough plan
Saturday - crab cakes, mashed potatoes, green beans
Sunday - spaghetti, salad
Monday - fish tacos, coleslaw, corn/tomato salad, 5 layer dip with chips
Tuesday - grilled chicken, Italian pasta salad, zucchini
Wednesday- burgers, hot dogs, baked beans, corn on the cob, ranch pasta salad, chips
Thursday - low country boil (crab, shrimp, red potatoes, kielbasa, corn)
Friday - fish ( flounder?), grilled shrimp, stuffed clams, okra, grits
 


Totally over budget on everything after moving states. Having to stock the pantry again, our stuff had to be stored a while so I couldn't keep too much.


ETA checked the cupboard and veggie crisper before writing a list so...

Sun- spinach, mushroom and almond filo pies, have leftovers to use up and can freeze for work lunches
Mon- bean and rice poke bowls
Tues- risotto, nice and easy in my thermie after swim night
Wed- schnitzel and steamed carrot, peas and garlic bread
Thurs- sardine fish cakes, green beans and roast cubed sweet potatoes
Fri- homemade pizzas
Sat- dal and rice

We ate leftovers one night last week so I have a carryover meal for this week.

Sun (off): grilled Greek steaks and veggies with pitas
Mon (7-5): crock pot cheesy bbq chicken with potatoes
Tue (1-10): garden spaghetti
Wed (off): grilled burgers and hot dogs, beans, chips and dip, watermelon
Thu (8-6): chicken Caesar salad
Fri (8-5): basil pork with honey lemon green beans and rolls

Mongolian beef
And leftovers
 
Beef lomein with zuchinni
Beef and cauliflower stir fry

I only need a carton of eggs and some kale to do this menu. I love cheap grocery weeks!
 
Well, no real plan for the next week. Basically using what's in the freezer and pantry to tide us over. We traveled over the long weekend. I picked up a couple of extra shifts for the second job, so the hubby and boys are eating what's in the house. We leave next week for holidays for a week, so I don't plan on purchasing much besides milk and maybe some sandwich meat. I will restock once we get back from our holidays...with hopefully more healthy options.
 
Well we ended up getting a batch of chicken curry from DH's grandma that did one dinner last week and was enough for making some pies this week so that saved a meal. He also did also butchery workshop yesterday so we have also few kilos of sausages and half a side of bacon too.

Sun- stuffed yams and green beans
Mon- fettuccine carbonara with a side of broccoli
Tues- tuna patties and veg
Wed- dal and rice
Thurs- smoked sausages, maybe some smoked chicken, taters and greens
Fri- leftovers
Sat- chicken curry pies and veg
 
We are up to our eyeballs in cucumber, tomato, and zucchini. I also need to clean out the fridge.

Soup beans, roasted cauliflower/peppers/onions/brussel sprouts, fried zucchini, tomato/cucumber/kale salad
Stroganoff and garlic green beans
Black bean and beef burritos, Zucchini and onions, tomato/cucumber/kale salad
Taco salad with black beans, tomato, cheese, salsa, kale, corn, tomato, cucumber and chips
Pork roast, potatoes, fried zucchini
Beer cheese soup, salad
Tortilla pizzas and chicken nuggets

I just need corn, and chips to finish up this menu. Last week I just knew I’d keep the groceries like at $10. It was $60, there were too many sale items.
 
I am planning meals for the next 4 weeks due to Gen Con being the first weekend of August (2-5) but I am struggling. Right now I have burrito bowls and roast chicken. That's it. Gonna have to go through these posts for some inspiration.
 
It was so stinking hot last week, I didn’t even want to grill. I did grill steaks on Sunday and they were so good I went back and bought more. I vacuum wrapped them and they’re in the freezer. Wasn’t planning on buying them but you have to when there’s a great deal. I also made waffles one night, ordered pizza one night, chicken from the deli one night and made chicken shawarma. The other meals were leftovers.

Tonight I’ll make Mongolian beef.
We’ll have grilled sausage(buns bought for last week)
Chinese chicken salad
BBQ ribs
And leftovers

I shouldn’t have much to get except sandwich stuff for a picnic and fresh fruit for later in the week.
 
I've been only planning a few days at a time, because it helps my food management to not get too many veggies at once.

Saturday (yesterday): Chili (whole30 friendly, so instead of beans in it, it had carrots and celery. Surprisingly good, and lighter than chili with beans. Used 2 lbs ground beef and served 5 people (2 of them my young adult sons who can eat a lot) and it is gone.

Today: Hamburgers and sweet potato fries

Monday: Chicken Tikka Masala, cabbage (I don't like cauliflower rice all that much, but strangely don't mind throwing food over stir fried cabbage)

Tuesday: Brats, cabbage, fruit

Tuesday - pizza
Wednesday- pot roast
Thursday - meatloaf, mashed potatoes, peas
