Wanting to try some new meal ideas over campfire next week (July 5-8 in Copake, NY at Copake RV Resort, formerly Copake KOA). What you like that is relatively easy prep? Got new grill stand to put over the campfire and want to try it out. Looking to expand from the usual burgers, dogs, etc...
 
I do shrimp and chicken too. Just made some shrimp kabobs today. Quick and easy once you have them skewered up.

Clean a trout, Lay out your foil place a line of sliced lemon and lay trout on top. Fill trouts cavity with butter and cover exposed side with additional slices of lemon. Wrap foil tightly and place on grill for approx. 12 to 15 min. Serve with asparagus cooked directly on the grill ( Soak in cold water for an hour, Lightly baste with oil after placing on grill ) or wrap in foil with butter
 


With a cast iron skillet or small dutch oven, can make anything like home, like this one pot dinner

3 garlic cloves, 1 onion, 1 green bell pepper. cook until onion is translucent, add 24 oz of Ragu spaghetti sauce, 2 cups of chicken broth, add 10 oz of pasta, cook until pasta is nearly done, add raw shrimp seasoned with memphis bbq powder, when pasta has about 2 mins left, cook 3 to 4 mins until shrimp is done. Serve.

If pasta is drying out sauce too much while cooking, you can add water to keep sauce from thickening too much or burning.
