The What's for Dinner Thread - August 2014

This is our new thread to post and share recipes! Come on in and chat! :flower3:


We do try to set a monthly theme where we all cook the theme over the same weekend, the last weekend of the month. Participation is not mandatory but it is fun to think that somewhere else in the world....someone else is also cooking a version of the meal you're cooking. We then check back in here and share the recipe. If nothing else, it's a Virtual Dinner with your WFD friends.

WFDT? It was a chicken stew (of sorts). With rice and stir fry snowpeas from the garden.
I do have pictures and when I unload them, I'll share the recipe.

Dinner tonight will be airplane food. I have no idea what but it will be on a plane.

Wouldn't it need to be vegan? I could possibly come up with a couple vegan options, but not raw. Mine would be cooked. I might have to cook like you. Something for me and something for Fran.

Vegetarian for most of us. Vegan for Brandi. I'm going to have to do the same for DS. He's definitely not interested in just vegetables now.
 
Chinese Chicken and Potato Stew


This is straight out of my childhood!


My starting ingredients:






  • 3 tbsp cooking oil
  • 4 chicken thigh fillets, chopped to bite-sized pieces
  • 3 medium potatoes, chopped to 2 cm cubes
  • 1 - 2 medium carrot, chopped roughly
  • 1 tablespoon dark soy sauce
  • 2 tablespoon oyster sauce
  • 1 tablespoon light soy
  • 300 ml water or enough to cover the meat
  • 1 star anise
  • Cinnamon
  • 6 whole cloves



Heat cooking oil in a wok and saute the onions until translucent. Add the star anise, cinnamon and whole cloves to the oil. NOTE: I didn't have any garlic otherwise I would have included it in this recipe.






Add the carrots and fry for another minute or so.






Add the chicken pieces and stir fry for 1 - 2 minutes.






Pour in the dark soy, oyster and light soy sauce and stir fry until well combined.






Add in the potatoes and water.







Cover with lid and simmer for 20 minutes or until the vegetables are tender.







I served this stew with rice and some snow peas. My dinner!

I love your idea of a vegan meal. I know, I know those are fighting words from this Beef producing girl, but I am up to the challenge. Sounds like fun!! I might even get Doug on board - maybe, :rotfl2:

Alison ~ God love ya.........I feel the same way about my pets. I loved that you and Fran missed them and had to come home early. Were they glad to see you too?

Saturday I went to Kearney and took Lilly out to lunch. We had such a good time. Stephanie had a baby shower to go to and Marty had to work. So I volunteered to be with Lilly. Doug stayed home and installed one of the windows in the bedroom. Oh it is so nice to be able to open the windows and have fresh air. It was REALLY hot (101) and stiffiling muggy so we didn't open more that trying it out.

Yesterday we had church and then back to Kearney for more trim. Fast trip and once home I got some baking in. Then the storms hit. We had torrential rain, pea size hail and 45 -60 mph winds. But the thing that was the worst was the lightening, I swear it hit on the property a few times. Lasted about 45 minutes.

WFDT ~ Grilled Pizza (I found a new recipe for the crust) green salad and tea.

Ellen - Sounds like a busy weekend. WOW! Hot and muggy and then rain. Hope you're okay.





It's Tuesday here and I didn't feel very well this morning. Bad headache that just won't go away. So, I stayed home and went back to sleep for another 3 hours. I haven't done that in a long time. It sure helped but I think an early night might be in order for me tonight.

Hey, y'all! I know I haven't posted in a while. Nothing too fancy, food wise, here. However, I have to let you know what we did last night. It turned out to be a huge hit!

I don't know about you, but my garden is mass producing zucchini and yellow squash. I can't keep up with it! I've made breads and grilled some, and sauteed some in butter. However, this recipe might just be my new favorite way to use up the produce in my garden! Sorry I don't have pictures! I didn't know it was going to be a hit!

First I cut a zucchini and summer squash into rounds and sauteed them in olive oil with salt and pepper for about 5 minutes until crisp-tender. Then I put them in a layer on the bottom of a 9 X 13 pan. On top of that, I sliced 4 tomatoes from my garden into rounds and put them on top of the squash. I sprinkled the whole thing with salt and pepper, and then covered it with 1 cup of grated mozzarella cheese. Then I took some chicken strips I had, dipped them in egg and coated them in bread crumbs. I browned them in olive oil and then placed them on top of the veggies. Covered the whole thing with foil and baked for 25 minutes at 350 degrees. Then I took off the foil, sprinkled another cup of mozzarella over the top and baked it for another 10 minutes to brown up the cheese.

It was so good! It was very "saucy" from the moisture of the squash and tomatoes, so I poured that off before serving it. I was planning on sending the leftovers with Alan for lunch today, but there were no leftovers!!! Hit!!! Home run!!!

Anyway, just thought I'd share, and let you know I'm still alive!

Doug and I are taking next week off, so this week at work is trying to play catch up. With being the only one in the office, it is really hard for me to take time off. But for the last 3 years I have give weeks back and I have decided this year that that won't happen. But wow, it is not easy to do.

WFDT ~ Grilled pork chops, salads (I made potato salad, pasta salad, coleslaw and cucumber on Sunday) and 7-up biscuits and a big 'ole glass of red. :thumbsup2

PIO - the chicken looks good. How is your DH doing on the chicken? Has he taken the plunge yet? Sorry you weren't feeling well yesterday. Good thing the nap worked out for you.

Ellen - we didn't actually cut the trip short, but it sounds like a good reason to come home. I had a friend who said "We ran out of money so we cane home." I though missing the kitties sounded more plausible for us. I haven't been to an Applebee's in years, though I like them. They recently opened one in Long Beach, but I haven't been able to convince her to go. I was trying on our trip to patronize local style places and avoid chains (besides Steak and Shake, since we don't have those here). However after our last night for dinner I was tired of those type of places. I'm looking forward to going to a restaurant here to get back to what I find as normal dining.

We had meatloaf last night. First home cooked meal I've made in several weeks. On our trip I picked up a bag of Amish made noodles, those with some butter and some green beans rounds out the meal. Tonight will be drive thru food on the way to band.
 
Kimmar - Irrespective of how it's spelt, I'm glad that "I'z-a" here.


Glynis - Nice to see you posting as well. I hope that you'll be around more often. Your garden sounds amazing. I grew zucchini and squash one year and never again! I was glad to see the end of that growing season. That recipe sounds great. I'm going to call it zucchini, squash and chicken bake with tomato and cheese.


Ellen - Thanks. I was well enough to go to work today but I was grumpy as anything. I really missed being in bed and resting today.
Are you and Doug going away? Enjoy!


Alison - DH ate the potato and carrots and some of the gravy. He didn't touch the chicken at all. But he's been having the broth made from beef bone marrow. He will eat the marrow but not the beef bits that I pull off the bone.







DS has also been sick and has not gone to school for the last 2 days. He's showing signs of being well enough to go back to school tomorrow. At least, he's been a relatively good patient at home.

WFDT? Mum's cooking. There's nothing like it.

Doug and I are going to go to the Nebraska State Fair on Wednesday and then on Friday we will head to Lincoln. We have our first home Football game. Go Huskers - GO BIG RED!!! I can't believe College football is starting already, but I also am so ready for it. :cool1:

Elizabeth & Jay and the boys brought over a bottle of wine and steaks last night for dinner. Needless to say the dinner I had planned went in the fridge. We ate outside and it was a beautiful night. Good fun and a great way to spend my birthday.
