Hi Deb - glad to have you on board (I just crack myself up!!)

I'm not sure if Will & Mickey will be coming along for this one....it'll depend if any CM discounts come out....so won't know about them until alot closer in. I'll be sailing w/ a very good friend who lives in MD - name of Colette. I love to travel w/ her....she trusts my judgement and just tells me to tell her where and when to show up (and when to shell out $). Not scared at all to try different things either.

Makes: 6 servings
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained 1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided 6 Tbsp. KRAFT 100% Grated Parmesan Cheese, divided 6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness 1 egg 10 RITZ Crackers, crushed (about 1/2 cup) 1-1/2 cups spaghetti sauce, heated PREHEAT oven to 375ºF. Mix cream cheese, spinach, 1 cup of the mozzarella cheese and 3 Tbsp. of the Parmesan cheese until well blended; spread evenly onto chicken breasts. Starting at one of the short ends of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired. Set aside.

BEAT egg in shallow bowl or pie plate. Mix remaining 3 Tbsp. Parmesan cheese and the cracker crumbs in separate shallow bowl or pie plate. Dip chicken bundles in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.

BAKE 30 min. or until chicken is cooked through (165ºF). Remove and discard toothpicks, if using. Serve topped with the spaghetti sauce and remaining 1/4 cup mozzarella cheese.


and tacos....tacos would be easier, but the other is sooo good!

V...those bundles sound really good, have you made them before? Are they something the kids like? Taylor is such a picky eater, I always look for new ways to make things I know she doesn't like....like protein, vegetables, and basically anythying other than candy!

Me too! Doesn't that sound wonderful? I'd love to take a vacation right now. I keep looking around the house at all the things I could be doing since I'm home from work today but I just don't feel like doing anything. Anyone have one of those days?? I think I might take the kids to Dave & Busters after school - have them run around and play some games. It usually is pretty quiet there in the middle of the afternoon. We would leave before the adults start to come as then it gets a bit crazy. Lisa

I often have those type of days where there is so much to do that it is overwhelming so I just don't do much of anything. This is the first vacation we have ever taken in winter. It is going to seem really strange. I think I am going to love it! It is snowing here now. I love the snow but there will be plenty more when we get back. Winter isn't even here yet.
