Last week kind of went sideways on me but in a good way, I think. The grocery had turkeys on sale for $.25/lb. The thing is we’re empty nesters this Thanksgiving and will be camping out of town so a 13 pound turkey was definitely overkil. Still, I can’t imagine December without turkey leftovers. I ended up ditching the planned burgers in favor of:
Friday
I roasted the bird on Friday so, instead of the burgers we had:
Turkey
Cornbread dressing
Sweet potato casserole
Brussels sprouts
I’m not a fan of sweet potato casserole and skipped it in favor of more dressing
Saturday
DH had tickets to the Arkansas-LSU game on Saturday so I just scrounged.
We’ll be empty-nesting this Thanksgiving and decided to take our travel trailer to Natchez for the holiday. We have reservations for Thanksgiving dinner here:

Monday
DH smoked the wings and legs of the turkey and I used them to make a turkey chili with black beans and sweet potatoes. I’ve never put sweet potatoes in my chili before and it was all kinds of tasty!

Wednesday (Natchez)
Turkey and andouille gumbo
Rice
Salad
Thursday (Natchez)
Thanksgiving lunch out

Oven baked sweet potato “fries”
