First of all your December trip sounds like so much fun! Also, the Coronado Springs locations sound really nice so I hope you look into them. I think it's perfectly all right not to have a cake if you don't want one. It's just tradition so you might get some comments from people but who cares, people will survive if they don't get any cake
I was kinda thinking along the same lines as Chilly. I have mixed feelings about it because I would definitely want to keep costs down too, but I could see how it would hurt people's feelings. If you were able to have the dessert party another day, say the night before instead of a rehearsal dinner, that might be a good option because most people don't expect to be invited to events like that. Or, it might depend on what family members you're including - if it's just your parents and the bridal party people might understand, but if you start including extended family but other family you aren't as close to or other friends aren't included it might hurt them. It's a very hard call, because dessert parties sound awesome and it would be great to have one, but you don't want the price to get out of hand!
And if I was only coming down for one day or two for a wedding I probably wouldn't go to the parks at all - Disney tickets are expensive but they're manageable when you buy 4 days or more. A ticket for just one day is almost $100 though and that's a bit much, especially if you don't have even a full day to do a park. But who knows, other people may think differently than I do and they might plan to do that!
I know what you mean but here is my deal I want to do some things that are specific to family and bridal party and besides this will allow those that came down some time to themselves to go to the parks that night and enjoy the rest of their day. I am predicting many will be there just the day before the wedding and the day of and then leave the next day because the wedding is on a Monday. any thoughts on that?
