What’s for Dinner Tonight?

Let us know how it comes out. I’ve never heard of making it that way. I bought too much stuff this week and now I need to get busy roasting veggies before they all go bad and make something with the impulse buy roast Costco chicken!
I’m pretty happy and will keep the new way of making fried recipe!
Not sure if it’s lower calorie or not ( I never follow the numbers slavishly but do try to avoid fried food of any type) but certainly don’t have to watch it cook constantly.

Youngest sister is coming by this evening so she offered to bring takeout.
Time will tell what it is.

I don’t know!!! Ankle swelling is down. Yay! Watching baby grandson all day tomorrow and it’s an early start, so not sure what I’m going make for din tonight. Maybe something I can also pack for lunch tomorrow while on Gigi duty. 👶🏼🍽️🍼
 
Last night was the corned beef and braised veggies so today the leftovers will become corned beef and veggie soup. Going to heat the original veggies up in the toaster oven, add some bell pepper strips and celeriac to the sheet pan (first) and then re-heat the meat, veggies and meat up in a pot. Toying with the idea of adding a spot of dairy into the broth. Got to check and see if any sour cream, yogurt or heavy cream needs to be used up.

Usually turn the leftovers into soup with some barley and diced tomatoes, but had some folks pop in and join us last night so no leftovers this year.

Tilapia tonight with some perfect asparagus I've been drooling for since I picked it up at the market Saturday. I'll probably round it out with some quick garlic knots and salad on the side.
