When do you make your Gingerbread house?

This year i have decided to make a gingerbread house for the holidays. I was just wondering when does everyone make theres (or should i say how early)?

We usually make ours 2 or 3 days before Christmas.
Once it is made, the kids pick on it, then in a few days it just gets tossed out.
