Everyone has a smartphone or digital camera, right? A photo-based "Hidden Mickey" scavenger hunt, where everyone compares the results at the end of the day, and EVERYONE wins - because you are at Disney World! 
One of our most excellent favorite things to do is the Pirates N Pals Fireworks Cruise. It departs from the docks at CR - but before you get a Dessert Party, complete with your new Pirate Pals, and a meet n' greet with Captain Hook - and a "bonus" special guest waiting at the dock when you return! The cruise itself is full of trivia games, sing-alongs and a lot of silliness; it's a "must do" for us every trip!
If you are looking for a different and fun dining experience, make sure you get over to Pioneer Hall at Fort Wilderness, and take in the Hoop-Dee-Doo Revue! The food is *excellent* (they share a kitchen with Trail's End next door) and the family-friendly show is live Disney entertainment at it's best. Another "must do" for us, every trip!
Lots of the Resorts have pedi-cabs you can rent now, and POR has horse-drawn carriage rides. Shoot, we love just taking the boat trip to and from the Port Orleans Resorts on the Sassagoula to Disney Springs; it's a lovely little trip, and you go past the Treehouses! As someone else here mentioned, Yee Haw Bob makes that trip WELL worth while!
If it's during Halloween or Christmastime, I *highly* recommend going over to Fort Wilderness, and looking at the decorations at the RV and camp sites - folks over at the Fort are legendary for their friendliness, and for the seasonal decorating!
The Star Wars Dessert Party at HS is great (as well as the fireworks parties at MK and Epcot) and we try to plan at least one for every visit. (Yeah, our "must-do" list keeps growing LOL)
Remember when you visit Poly that there is a Dole Whip Window out on the patio - and there are chairs and tables to sit and enjoy the yummy!
Last, but certainly not least, one of our favorite souvenirs is a pair of TOMS from Curl at Disney Springs; then we have one of their artists custom paint them, and you have a Disney memory that you can wear every day!
