How do you make lasagna with meatballs in it? That sounds delish!

You just slice them up pretty thin and just place them on the layers and cover with sauce...the sausage I will take out of the casing. That lasagna thread really got me craving lasagna. Not to good for my diet though...:upsidedow

I just had lasagna for breakfast... made it yesterday and it was fantastic. We will keep it in the fridge and pick at it for a couple days. :thumbsup2

Making a new crockpot recipe tonight... Beef Bourguignonne....

Well, since I haven't eaten there before, I won't notice a difference. ;) I think I'm most excited b/c we've pulled this surprise trip for DD off w/o a hitch. The cars are packed and the kids are still in bed. She has no idea what we're doing today--she thinks we're taking the car into the shop and then taking her to school. I can't wait to see her face when she realizes what's going on!:goodvibes

WFD tonight: Chicken Fajitas! yum..so good and easy peazy! I am a little concerned about the sodium in the seasoning though, since i always do a weigh in on Friday mornings..oh well..Perhaps I will use my sodium free Mrs. Dash Chipotle seasoning instead...hmm...there is a thought! ::yes::

Have a great time!! We really loved Kona when we went in June..someone in your party HAS to have the crabcakes...soo yummy!:)
 
Meatballs

1 1/2 ground beef (85% lean or less works best for moist meatballs)
minced garlic, probably about 4 - 6 cloves...I like alot
chopped parsley, 1/4 cup
2 eggs, slightly beaten
3/4 cup milk
1 cup breadcrumbs, you can use day old torn bread too but I rather crumbs
salt and pepper to taste
1/2 - 3/4 cup grated parmesan cheese
2 tbs melted butter
***You can add basil, oregano and grated onion but I prefer only parsley and garlic

Soak breadcrumbs in milk and let sit for about 5 minutes (Trick 1).

Gently mix all ingredients, including melted butter (trick 2). Roll into the size balls you want...I tend to make them big and set them aside on a baking sheet.

Now, here is my (trick 3) to make soft meatballs...drop raw meatballs in simmering sauce, stir gently and let cook for at least 20 minutes.

If you do not want to do this, bake at 350 for 30 - 40 minutes turning occasionally and then drop in sauce.

Another thing I do is to taste the meat mixture before I cook it. I know this sounds gross but if the ingredients are fresh it is OK.

Gretchen- A big Happy Birthday wish to your DD!

My PT is going very well. I am not 100% yet, but a lot stronger than I was. Yesterday I saw a woman who did a lot more damage to her meniscus and had been on bed rest for two weeks before she could even put weight it. She was in tremendous pain still so I know I am blessed, it could have been so much worse.

Tonight I think I am going to make a Mexican Lasagna for dinner. I am trying to use up what I have on hand because I want to avoid the grocery store until the weekend if possible. I seem to have gone through a lot of money in the last three weeks :confused3
 
WOw.you ladies are great!! I can't wait to try all of these recipes this season! Greg will be thrilled..and maybe realize what a good thing it is that i am Disboard addicted! ;)

You know, everytime I try a new recipe DH asks where did I get it. My answer is usually a vague "the internet" or "friends on the net" - when more often than not my source is HERE! Don't know why I feel the need to keep my DIS time a secret?!?

Lindsay - I know you're a Rachael Ray fan. I've been using the meatball recipe she includes in her Spaghetti & Meatball Stoup. It's pretty close to the recipe above (without all the secrets!) I now use RR's recipe & cook my meatballs in the sauce, so they come out nice & tender.

And stop the talk about lasagna.....y'all have started a serious craving! I just might have to try a meatball & sausage version of my own. That sounds delish!

Thanks for the info. I have made those meatballs only for that particular stoup. I haven't made them for anything else. I will have to give them a try. :)

Dinner tonight will be the lemon cream chicken I was going to do yesterday! Alan surprised me by getting off work early and cooking dinner. He also took care of getting the kids ready for bed and tucked in so I could take a bath! What a darling!!!!

cajun - I used to be afraid to tell DH about my internet family, too. However, now he knows all about you, and asks how you all are every day! He's so grateful for all the new recipes, too! If I tell him I got the recipe here, he's a happy man! His favorite recipe so far is the Reuben Chicken Bake (mine too, truth be told!)

Kathy - 9 days!!!:banana: :banana: :banana: You are sounding so positive! I'm sure you have your hard moments, but you seem to be keeping really upbeat! Good for you! By the time you get to WDW, you'll be over the worst, and will really be able to enjoy yourself!!!

Stephanie - I know I've probably missed you, but I wanted to wish you a happy trip!!! I'm so impressed that you've been able to keep the secret! I want to do that with my kids someday! I really thought we were going to be able to do that with a Christmas trip this year. We've got all the OT from Alan's work trips lately, and Alan himself suggested it. We did a ton of planning, and then Alan checked his work schedule: he has to work Christmas Eve, Christmas Day, and the day after. So, it looks like we'll be staying home. I still want to do the surprise trip, though! Someday!!!
