We're having penne vodka tonight. It's my first attempt at actually making the sauce and not buying the Bertolli jar of it.

Do y'all put any kind of meat in your penne vodka? We are such carnivores that I feel strange making a meatless meal.
 
I will adjust quantities when I make them later (I will measure ;) )

I'll be waiting for any changes. I have always wanted to do a spaghetti and meatball dinner for Kenny because he loves it, but I didn't want to buy meatballs and honestly, I've been too scared I would mess them up.

This is for sure on next week's menu.

My PT is going very well. I am not 100% yet, but a lot stronger than I was. Yesterday I saw a woman who did a lot more damage to her meniscus and had been on bed rest for two weeks before she could even put weight it. She was in tremendous pain still so I know I am blessed, it could have been so much worse.

So glad therapy is going well. I don't have to tell you your positive attitude helps a great deal.:thumbsup2

You know, everytime I try a new recipe DH asks where did I get it. My answer is usually a vague "the internet" or "friends on the net" - when more often than not my source is HERE! Don't know why I feel the need to keep my DIS time a secret?!?

I was like that at first, but now Kenny is used to it and he always wants to know whose recipe it is. He is horrible with names, but he knows that the mexican stuffed shells and velvet shrimp are Kathy's, the pot roast is Glynis's, and his "absolute favorite all-time pork chops" (his description) are Lauren's. You get the picture.

DAY NINE (smoke free) and doing fine!!!!!!

That's Great! And I'm dancing right along side you. We're now getting to the really excited stage at our house. My parents came over last night to see Amanda on her bday and we were discussing the trip. They are going with us and I am so thrilled. Mom has been with me several times, but this will be Dad's first trip with us. It's thrilling to see him so excited.

I used a mixture of sweet and hot italian sausage in mine. We loved it, but it is too time consuming to have in the regular rotation.

My recipe does not have any meat in it...just chicken broth but my sister puts prociutto in it.

Lauren, I'd love any secret to the sauce you'd be willing to share. Heck, I'd love to have the whole recipe.

Thanks Gretchen! I have been writing down my ingredients as I go...I like to cook the sauce for several hours so may want to try this on the weekend. ;)
 
MA pigletfan Here is that Beef stew recipe I promised yesterday.

Herbed simmered Beef stew

2Lb beef stew meat 1" cubes
freshly ground pepper
2 tblsp flour
2 tblsp olive oil
3 cups sliced mushrooms
3 cloves garlic minced
1/2 tsp each dried marjoram, thyme and rosemary crushed
1 bay leaf
1 can 14 oz beef broth
3 c fresh baby carrots
12 whole baby red potatoes

season beef with pepper and coat with flour. Heat oil in a large saucepan. Add beef and cook until browned stirring often. Add mushrooms,garlic and herbs and bay leaf. cook until mushrooms are tender and liquid evaporates. Add broth. Heat to a boil. cover and cook over low heat 45 min. Add carrots and potatoes heat to a boil. Cover and cook addl 30 min or until done over
low heat. Remove bay leaf serves 6

Jennifer, I can't believe you're cooking already! After I had all my kids, I could pretty much guarantee that Alan would be cooking for the first couple of weeks! You are superwoman, girl!!!!!

Aimee, I've never attempted this for that exact reason. My guys would say "where's the meat?". Let me know what you decided and how it came out. Also is the recipe posted here?

Our dinner was not as good as I had hoped. I couldn't really do what I wanted because I was working with only one good hand. Tonight when I was leaving the gym, my knee went out and I went to the floor, hard. I have a lovely goose egg just below my knee which is hard to see since I also took all of the skin off of that area. However, the issue I'm most concerned about is my left wrist. I jammed it or something trying to catch myself. It is really sore tonight and a little swollen. I am hoping it is better by tomorrow because it sure is hard typing with one hand. I'm such a clutz. :sad2:

I didn't cook it. my grandma made it for me.

last night my mm sent over some homemade stew, she had made the night before

Waiting for her to be a little less Jaundiced

It turned out to be tasty but honestly, the jarred stuff is cheaper, easier, and dare I say - tastier. I'm glad I tried it once but I'm going back to the easy stuff. Plus I almost cried when I poured all that vodka into it! :rotfl:

DH hasn't made it home yet to hear his opinion on it. I bought some really cheesy and buttery garlic bread so he probably won't complain too much!

lol...pouring that vodka in it does make it seem like its alcohol abuse doesn't it! Did you put sundried tomatoes in it by chance? My favorite aurora/vodka sauce has a ton of those bad boys in it...
and Cheesy garlic bread makes everything taste A-OK! :thumbsup2
