Moved from the Budget Board: Salad recipes?? - Graduation party

Here is one that is easy & yummy

1 box rotini
2 tomatoes
1 cucumber
handful or more of fresh green beans
Kens Italian marinade/dressing
feta Cheese
5-6 slices Salami (or more if you like)
5-6 slices of provolone cheese (or more if you like)

Cook Rotini according to directions, drain & cool
cut up tomatoes, cucumber & green beans into small bite sizes
roll up Salami & Provolone together and slice into small circles
Toss everything together add the Feta & pour on the dressing (to your liking) and Toss again
 
Tortellini Caesar Salad

1 package (9oz) frozen cheese tortellini, cooked & drained
1/2 cup mayo
1/4 cup milk
1/4 cup plus 1/3 cup shredded parmesan cheese, divided
2 tablespoons lemon juice
2 garlic cloves, minced
8 cups torn romaine
1 cup seasoned croutons
halved cherry tomatoes, optional

In a small bowl combine mayo, milk, 1/4 cup parm cheese, lemon juice & garlic; mix well. Place Romaine in a large bowl. Top with tortellini and remaining 1/3 cup Parmesan cheese. Just before serving, drizzle with dressing and toss to coat. Top with croutons and tomatoes, if desired. 10 servings

I love this salad and at times to make it super simple I'll buy bagged lettuce and bottled ceasar dressing and put it all together.


Overnight Pimiento Potato Salad

2 pounds small red potatoes (about 12), cooked
4 green onions, thinly sliced
3 celery ribs, thinly sliced
1 jar (2 ounces) diced pimientos, drained
1 bottle (8 ounces) Italian salad dressing

Cut potatoes into 1/4 in. slices. In an ungreased 13 x 9 dish, layer half of the potatoes, onions, celery and pimientos. Repeat layers. Pour dressing over all. Cover & refrigerate overnight. Stir before serving. 12 servings.

You may be salad out by now, but this one is always a big hit.....

Fresh tortellini (I like tri color) cooked and cooled. Mix with shrimp, peas, diced red onion. Mix with a dressing that's a fruit/herb combo. I have used orange/basil or lime/cilantro. If the dressings are fat free, I'll mix in a little olive oil to help keep the salad moist. Sometimes I'll throw in an additional ingredient like small brocolli florets or chopped red bell pepper.

It's a really pretty salad!
 
I was going to post this exact recipe. VERY GOOD and light too.
As for the package of slaw...I use broccoli slaw mix.

I was gonna post this too. I use sliced Napa cabbage instead of the slaw mix and chicken flavored ramen without the packet. Also I use sesame oil instead of the honey or corn syrup.

Kathys taco salad

brown 1 - 11/4 Hamburg
add pkg of Ortega Taco seasoning mix - add water as listed on pkg
LET COOL - otherwise heat will wilt lettuce
add meat to 1 head of lettuce torn
add 1 good size valdalia onion sliced thin
add 1/2 cp of doritos chips (your favorite flavor)
mix in Thousand Island dressing to taste
once in the bowl top with shredded mexican cheese and chopped tomatoes
 
Sante Fe salad

Macaroni cooked, canned corn, canned black beans (drained), chopped red bell pepper, chopped green pepper, chopped onion, chopped celery. Mix together mayonaisse with taco seasoning and add. Salt & pepper to taste.
Can substitue mayo for ranch dressing.
 
I love the broccoli salad, I make it all the time during the summer. My recipe doesn't have raisins or sunflower seeds in it, although the last time I made it I added sliced almonds and matchstick cut carrots and loved it.

This isn't really a salad but more of a dip, but buffalo chicken dip is so good, tastes just like hot wings, without all the mess!

Cut up Snickers bars into small pieces
Mix with Cool Whip to coat

The Cool Whip keeps the apples from browning and it tastes like a carmel nut covered apple!

I love this one!!!! I am putting it on the dessert table. I also do the grape salad...since people are subscribing... I'll add it for an idea. It gets rave reviews.

Best Grape Salad

2 lbs green seedless grapes
2 lbs red seedless grapes
8 ounces sour cream
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract, to taste

Topping Ingredients
1 cup brown sugar, packed, to taste
1 cup crushed pecan, to taste

Directions
Wash and stem grapes.
Mix sour cream, cream cheese, white sugar and vanilla by hand until blended.
Stir grapes into mixture, and pour in large serving bowl.

For topping: Combine brown sugar, and crushed pecans.
Sprinkle over top of grapes to cover completely.
 
Straberry Jello Pretzel Salad
This ones to die for!

Crust
2 cups crushed pretzel sticks
3/4 cup of melted butter
3 Tbs of sugar

Filling
8 oz pkg. cream chees
1 cup sugar
1 small can crushed pineapple
1 small container cool whip

Jello
1 lrg. pkg strawberry jello
2 cups boiling water
2 samll container frozen sliced stawberries in sugar

Mix crushed pretzels, butter and sugar and press into bottom of a 13 x 9 pyrex dish. Bake at 375 for 8 minutes . Let cool.
Cream sugar and cream cheese together, and the fold in the coolwhip and crushed pineapple. Spread over the pretzel crust.
Mix jello with hot water until disolved. Instead of using cold water to set stir in the sliced stawberries. Let this mixture stand for 5 - 10 minutes and then pour over whip cream layer. Place in refrigerater to set .:cloud9:
 
Mediterranean Orzo Salad

1 lb. orzo pasta
1/4 lemon juice
1/4 cp EVOO
1 pound tomatoes diced
1 seedless cucumber quartered and cut into 1/2 inc pieces
1/3 cp pitted Klamata olives, coarsley chopped
8 oz feta cheese crumbled
salt and freshly ground black pepper to taste

Prepare pasta as diected on box , drain in collander and rinse with cold water.
Set aside.
Meanwhile , in a small whisk together the lemon juice and olive oil. set aside.

In a large bowl combine the tomatoes,cucumbers,olives,feta cheese,and Orzo.Add the drssing and toss well to coat. Season with the salt and pepper.:cutie:
 
Similar to June's from above:

Broccoli Salad:
1 head fresh broccoli, cut into bite size pieces
1/2 cup raisins
1/4 cup red onion, chopped
2 tablespoons white sugar
3 tablespoons white wine vinegar
1 cup mayonnaise
1 cup sunflower seeds
10 slices bacon


DIRECTIONS
Cook and crumble bacon.
In a salad bowl, toss together broccoli, raisins and red onions. In a separate bowl, whisk together the white sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.
Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.

Blueberry Jello Salad/Dessert-Making this one for company this weekend!

1 (21 oz) can blueberry pie filling
1 (8 oz) can crushed pineapple, undrained
2 (3 oz) boxes grape jello
2 cups boiling water

1 container cool whip
1 cup sour cream
fresh blueberries for garnish

Dissolve jello in boiling water, add pie filling and undrained pineapple to jello. Pour into 9x9 pan (or mold) and place in refrigerator to allow to set at least 2 hours or overnight. (I let mine chill overnight.) Gently combine cool whip and sour cream and spread over the top of the jello. Sprinkle blueberries on top.

**I have heard of people substituting black cherry or cherry jello and cherry pie filling for the grape jello & blueberry pie filling, but I've never tried that. I'll bet that'd be good, too!**
 
basic recipe

1 lb rotini pasta cooked al dente and cooled
1 pkg. cole slaw mix
1 small bottle Marzetti's slaw dressing
EITHER
1 cup chopped celery
OR
1 tsp. celery seed

Mix and chill.

creative additions -
hard cooked eggs chopped
chopped onion
chicken
ham

Hmmm....Apples are good for you, and they do have fat free cool whip. Yay!! A health food recipe!! (this sounds wickedly good).

We do the same thing here except we use Catalina dressing instead of Thousand Island and also no dorito chips.

All these recipes sound great!
 
How about a cabbage salad-I'm really picky, but I love this!

1 small head of Green Cabbage (chopped) or small pkg of Cole Slaw (I do this fast and more colorful).
1/2 cup Sliced Almonds (I toast these, I like the flavour)
1 pkg. or Ichiban Chow Mein Soup
1/4 cup Toasted Seseme Seeds
Green Onions Chopped (I don't put these in as I don't like them)

Dressing: spice from soup mix, 1 tsp. Salt, 1/2 cup Oil, 1tbsp. White Sugar, 1/4 cup Vinegar.

Add dressing to the cabbage, almonds, soup noodles, seseme seeds and onions. Toss and serve.

If you use the pkg of Cole Slaw don't put all of the dressing on it is too much. Refridgerate left over dressing and use it for another salad.
